    • Use appropriate knife techniques to produce professional quality cuts

    • Portioning and producing cuts of meat such as a pork medallion

    • Deciphering the yield and profit of the meat

    • Working safely in a commercial butchery setting and using appropriate personal protective equipment (PPE)
