    During this course you'll learn to:

    • Break down a pork carcass and produce competition style pork cuts such as baby back ribs, St. Louis-style ribs, Boston butts, collar butts, bacon and ham

    • Break down a forequarter of beef and prepare competition brisket, cattleman cutlets , tomahawk steaks, Denver steaks, Delmonico steaks and flat iron steaks

    • Prepare salmon and chicken meat for brining, smoking and cooking

    • Reverse sear and barbecue beef, chicken, salmon and pork

    • Use a pellet smoker, a drum smoker, a gas smoker and a commercial smoker with traditional fuels, including timber, smoking wood varieties and charcoal

    • Apply safe and effective knife handling techniques
