    This master class is the only one of its kind in NSW and caters to butchers, farmers and lamb enthusiasts. Gain specialist knife and butchering techniques to savour the delicacy of lamb products such as lamb cutlets and lamb racks.

    During this course you'll learn to:

    • Prepare and butcher a side of lamb

    • Conduct quality selection of the carcass components, including muscle composition

    • String and roll a lamb roast

    • Use appropriate knife techniques to honour the quality of the meat

    • Portion and produce expert cuts of meat such as lamb cutlets, lamb rack or a lamb roast.

    • Decipher the yield and profit of the meat

    • Work safely in a commercial butchery setting and using appropriate personal protective equipment (PPE)
