    Learning outcomes

    Through a mixture of theory and practical course work, learn to:

    • Prepare food using basic methods of cookery, such as baking, steaming, grilling, etc.

    • Follow standard recipes

    • Use equipment safely and hygienically to prepare food

    • Prevent food contamination

    • Prepare, store and dispose food safely and hygienically

    • Apply safe work practices in a commercial kitchen environment

    • A nationally accredited Statement of Attainment

    • A pathway to further study in cookery

    • Credit toward both the Certificate II in Cookery and the Certificate III in Commercial Cookery

    • The ability to organise and prepare food efficiently in a commercial kitchen environment

    Entry recommendations

    To be prepared for this course, we recommend that you have:

    • An interest in pursuing a career in Asian or commercial cookery

    • Attention to detail and a love for food and flavours

    • Resourcefulness and an ability to work autonomously or as part of a team

    • Good literacy and numeracy skills at Year 10 level

    • The ability to provide your own closed shoes for safety

    • Reasonable physical ability to stand in a kitchen for several hours
