During this course you'll learn to:
Prepare and butcher a side of pork
Conduct quality selection of the carcass components, including muscle composition
Roll and string pork for a spit roast
Use appropriate knife techniques to produce professional quality cuts
Portioning and producing cuts of meat such as a pork medallion
Deciphering the yield and profit of the meat
Working safely in a commercial butchery setting and using appropriate personal protective equipment (PPE)
