    If you’ve always been fascinated by the world of patisserie and love creating a multitude of different kinds of delicate pastries, then the Certificate IV in Patisserie is for you.

    Learn from experienced teaching staff who will share years of knowledge and patisserie techniques to prepare you for a real work environment.

    Through both theory and practical learning, gain a stronger understanding of topics such as restaurant desserts, modern gateaux, petit fours and sustainable practices.

    As part of your training and assessment, you will need to complete at least 24 supervisory shifts which will enhance your skills. A majority of this will be conducted during your class sessions however we also recommend that you seek paid employment to assist you in successfully completing this assessment requirement.

    Patisserie classes for students at Ryde are conducted in the specialist Patisserie kitchens in Meadowbank Campus. Meadowbank Campus is conveniently located next to Meadowbank Train Station.

    Additional costs for uniforms, equipment, textbooks and materials (if applicable) range from $300 - $1,000 AUD per course.

    Structure and unitsWhat you will study

    At the start of your course, you will receive your timetable. You will need to study all core units and a range of additional units.


    26 core units 6 elective units, consisting of:3 units from Group A or Group B below 3 units from the electives listed below or from any current endorsed Training Package or accredited course.
    All electives chosen must contribute to a valid, industry-supported vocational outcome.

    You may gain entry to another university using your TAFE NSW qualifications. Acceptance and the amount of credit transfer may vary depending on the university and course studies. Check your credit eligibility.

    At TAFE NSW Ryde:

    • If you apply for a package of Certificate IV Patisserie (1 year) and Diploma of Hospitality Management then you will receive 6 months credit towards the Diploma, hence the Diploma duration will be reduced to 0.5 year. (Package Duration: 1.5 years)
    • If you apply for a package of Certificate IV Patisserie (1 year) and Advanced Diploma of Hospitality Management then you will receive 6 months credit towards the Advanced Diploma, hence the Diploma duration will be reduced to 1 year. (Package Duration: 2 years)
    • If you apply for a package of Certificate IV Patisserie (1 year), Diploma of Hospitality Management and Advanced Diploma of Hospitality Management then due to credits the Diploma and Advanced Diploma duration will be reduced to 0.5 years.(Package Duration: 2 years)
    • If you apply for a package of Certificate IV Patisserie (1 year), Diploma of Hospitality Management and Bachelor of Business specialising in Hospitality and Hotel Management then due to credits the Diploma duration will be reduced to 0.5 years and the Bachelor degree duration will be reduced to 2 years (Package Duration: 3.5 years)


    You are able to package two or more TAFE NSW courses together. This means you can plan your studies to achieve your career goals. When you apply for a TAFE NSW vocational pathway, you can apply for a Student Visa that will cover the duration of your study.
